College of Applied Food Sciences and Tourism (CAFST)

The College of Applied Food Sciences and Tourism is one of the eight Colleges and two Schools approved at the inception of the University in 1994 as College of Food Processing and Storage Technology. This followed the establishment of specialized Universities of Agriculture in Nigeria.

The Michael Okpara University of Agriculture, Umudike, was established in May 1993 (as Federal University of Agriculture, Umudike) by Edict no 48 of the Federal Government of Nigeria, with a central mandate and mission of imparting agricultural education in a scientific and practical way, undertaking applied research and such extension services as would assist the achievement of national self – sufficiency in food production, and catalyzing as well as sustaining rural development.

At inception, the University approved five departments for the College as follows:

  1. Brewing and Fermentation Technology.
  2. Food Science and Technology.
  3. Home Economics.
  4. Hotel Management and Tourism.
  5. Human Nutrition and Dietetics.

The Department of Home Economics was the first to commence in 1993/1994 academic session, followed by Food Science and Technology in 1994/1995 academic session. The Human Nutrition and Dietetics was introduced as a programme in Home Economics Department in 1995/1996 academic session but was established as a full Department in 2004/2005 session. Hotel Management and Tourism was introduced as a programme under Home Economics Department in 2002/2003 academic session.

The name of the College was changed from College of Food Processing and Storage Technology (CFPST) to College of Applied Food Sciences and Tourism (CAFST) in 2008 out of the growing need to capture the various programmes of the College.

The founding fathers and foundation students of the college have contributed immensely to the development and growth of the College, and their efforts are gratefully acknowledged. The College acknowledges the efforts of Dr. (Mrs) C. C. Nwabara and Prof. E. N. T. Akobundu who were the pioneer and second Dean's of the college respectively.

Departments in the College

Philosophy

Food has remained a basic human necessity and unfortunately a commodity that is globally in short supply in quantity and in quality. Post Harvest food losses and seasonal food shortages point to the weakness of traditional training thus suggesting a new orientation. Food Science and Technology when properly executed, offers many exciting challenges like discovering new food sources and preservation methods to feed the world, improving consumer food products in the market, designing specialty food for target groups like infants, nursing and lactating mothers, diabetics, athletes, astronauts, the elderly; etc; and most importantly, ensuring that the food supplied is safe and nutritious.

To achieve the national goals and objectives of industrialization and self-reliance, the food science and technology education is geared towards:

  1. The development of a thorough practice in – training.
  2. Early broad – based training in Food Chemistry, Engineering and Technology.
  3. Practical Application of Engineering, Technology and manufacturing processes.
  4. Close association of the programme with industries in the country.

The general philosophy therefore is to produce graduates with high academic standard with adequate practical background and of immediate value to industry and the nation in general. In pursuance of the above, specific features have been incorporated into the programmes.

These include:

  1. Common foundation years at 100 and 200 level for all students.
  2. Workshop practice, technology, laboratory work and tutorials.
  3. Broad –based food processing and analysis as well as mutual interaction between students and professionals.
  4. Execution of final year project on which the student works alone under supervision.
  5. Special skills and in-depth study in a particular area of the programme through optional courses or electives.
  6. Adequate knowledge in the areas of Engineering Management, Economics and law.

To prepare skillful and knowledgeable students and community members who will use problems solving skills in ensuring food and nutrition security and hospitality.

Mission

To initiate and implement timely, effective and efficient academic programmes and activities aimed at producing quality and competent graduated in Food Science and Technology, Home Economics, Hotel management and Tourism and Human Nutrition and Dietetics.
